Setting out to create the  kind of agriturismo we would love to stay in ourselves, we applied our own green philosophy to the business from the outset, a philosophy which continues to evolve. We take environmental responsibilty seriously at Podere Il Fornacino and we use 'green' methods wherever possible from the use of low-energy lightbulbs and energy-efficient appliances throughout the farmhouse, monitoring of energy and water use, minimising and recyling of waste, the creation of a wildlife-friendly garden, rainwater collection and a commitment to organic produce have been standard practice from the outset. The organic philosophy is central to the management of our farm and agriturismo as we believe that we have a responsibility to care for our planet and that it is up to each individual to be accountable for their impact upon the environment therefore each element has to be in harmony with nature. Since moving to the country to live on our 4 hectare property just inland from the beautiful Etruscan coast we live on solar power and collect our own water from the roof of our house, and all water used in our farm, kitchen garden & olive groves is runoff from the hills above us.
In order to grow foods that look good, taste good and are good for you, is committed to sustainable agriculture embracing the traditional philosophies of farming and recognizing the importance of growing crops through natural means.
Focusing on small scale, sustainable agriculture and by serving our guests only  fresh, organically grown food, we hope to provide our guests with the chance to experience an authentic experience whilst promoting healthy food & protecting the welfare of our environment Whether you gather eggs, pick fruits or vegetables, put your hands in the dirt or just sit still and enjoy the sunrises or stars, we want our farm to feel like a special place where you can loose contact with your daily routine & forget your worries. We have found that there is something about being surrounded by fields, trees, animals and open spaces that can clear the mind and soothe the soul. Walk the trails. Breathe in the fresh country air. Watch the sunset over the rolling Pisan hills.

Our smallholding is integrated into our kitchen and we strive to use ingredients on a “Field to fork” basis. Organic 0 kilometer food means the smallest carbon footprint possible and obviously the freshest, healithiest food. Fresh food means more vitamins and minerals and is generally more nutritious. Here at Podere il Fornacino this means a passion for produce as well as a passion for cooking and serving home grown food with tasting menu's centred around  what’s fresh and in season to make use of our own as well as other local foods. What we don’t grow ourselves we try and purchase from local  farms who share our same values as much as possible. We passionately believe in respecting the food we eat and we strive to produce 'real' food with real taste, reared and grown with love.The aim is for your vegetables and herbs to be served within hours, if not minutes of harvesting, meat to be of the utmost quality; knowing the animal it came from from birth therefore knowing exacitaly what it ate.
Our animals enjoy much of the food waste generated by our guests as well as kitchen prep. What cannot be fed to the animals (coffee grinds, egg shells, etc.) is composted with garden waste, animal manure and bedding to enrich our kitchen garden soil the following year.
